preperation time 15 minutes
2 courgettes roughly chopped
2 peppers roughly chopped
1 red onion roughly chopped
2 tbsp olive oil
1 tbsp dried mix herbs
350 g (12 oz) penne pasta
1 x 500g jar tomato and basil pasta sauce ( can make your own i just cheat!!!)
1 x 125g mozzarella cheese
15 g (1/2 oz) grated parmesan cheese
Pre heat oven to gas mark 6 gather all vegetables with oil, herbs and seasoning and shake around tin. roast these for 20-25 mins. meanwhile cook the pasta according to instructions (usually 10 mins max) Drain and mix with the sauce and roasted veg.Top with cheese bake for 15 mins serve with fresh thyme and salad etc.
Tip if you like your food spicey this recipe may not be sufficent for you so feel free to add your own ingredients. Then you could post me back with your own tip ha ha.
